Strain and keep the broth.<\/li>\n<\/ul>\n<\/li>\n<li>Make the red sauce:\n<ul>\n<li>Soften the chiles by boiling them for 5 minutes.<\/li>\n<li>Blend chiles with tomatoes, onion, garlic, and some of the broth. Strain.<\/li>\n<\/ul>\n<\/li>\n<li>Cook the vegetables:\n<ul>\n<li>Add the red sauce to the broth. Stir in potatoes, carrots, salt, pepper, and oregano.<\/li>\n<li>Cook for 15\u201320 minutes until veggies are tender.<\/li>\n<\/ul>\n<\/li>\n<li>Add the shrimp:\n<ul>\n<li>Add the shrimp and cook for 3\u20135 minutes, until they turn pink.
