It is another food truck that has re-invented what it means to be Latinx in the world today. And this food truck adds another one of my favorite foods, Vietnamese, to the cultural and ethnic food that I grew up with all my life- my Mexican food. They even have an “award-winning Birria Taco,” according to the owner, “they are the stuff of local legend—because they are slow-stewed, spicy, and dunked in rich consommé.” And who doesn’t love a Birria Taco?

Plus, if you have ever been to Mexico, you know about our “famous” Elotes (corn). And Komodo Loco has Elotes, as well. In fact, they are known for their Original Fusion Elote, which has a “creamy, tangy, house-made sauce that blends Vietnamese spices with our Mexican street corn” traditional seasonings. If you want some crunch and heat, you can also try their Takis Elote. According to the owner and their staff, this is a “fan favorite” because it is loaded with crushed Takis, chili-lime zest, and an “addictive” fusion sauce.

In addition, they have the famous Banh Mi sandwich. This sub-like sandwich has a “savory mashup” of Al Pastor and Vietnamese Char Siu-style Pork. And if you aren’t into too much spicey like me, you can get a Horchata Boba Tea to wash it all down and cool yourself off. Horchata is a rice water drink with sugar and cinnamon, very well-known in Mexico. However, here at Komodo it is made into a Boda Tea, that still has a sweet and creamy finish. Komodo Loco, as you can read, is not your average food truck. It was so wonderful to see them bring together Southeast Asian food with Mexican at the Columbus Taco Fest on May 25, 2025. Let’s continue to support our small businesses, and please give them a try and or visit their Facebook page.

Además, si alguna vez has estado en México, conoces nuestros “famosos” Elotes.

By Dr. Linda Alvarado-Arce Komodo Loco is Vietnamese-Mexican “fusion” street food.
