Form into small meatballs (about golf ball size) and set aside.<\/p>\n<p>&nbsp;<\/p>\n<p>2\u00a0\u00a0\u00a0 Prepare the Sauce:<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 In a small pot, boil the tomatoes and guajillo chiles until the chiles are softened (about 10 minutes).<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Remove stems and seeds from the chiles.<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Blend tomatoes and chiles with several cloves of garlic, a little salt, and some of the cooking water until smooth.<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Strain if desired for a smoother sauce.<\/p>\n<p>&nbsp;<\/p>\n<p>3\u00a0\u00a0\u00a0 Cook the Meatballs:<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 In a large pot, heat a bit of oil over medium heat.<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Brown the meatballs lightly on all sides (they don\u2019t need to cook through completely).<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Pour in the blended sauce and enough water to form a broth (about 6\u20138 cups).<\/p>\n<p>&nbsp;<\/p>\n<p>4\u00a0\u00a0\u00a0 Add Vegetables:<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Bring to a boil, then add the chopped carrots and potatoes.<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Simmer over medium heat until the potatoes are nearly tender.<\/p>\n<p>&nbsp;<\/p>\n<p>5\u00a0\u00a0\u00a0 Finish the Soup:<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Add the zucchini and a small bunch of cilantro.<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Simmer another 5\u201310 minutes, until vegetables are tender and meatballs are fully cooked.<\/p>\n<p>\u25e6\u00a0\u00a0\u00a0 Taste and adjust seasoning with more salt, pepper, or bouillon as needed.<\/p>\n<p>&nbsp;<\/p>\n<p>Serving:<\/p>\n<p>Serve hot with warm corn tortillas or rice on the side.
