Ingredients

  • 2 lbs sweet potatoes
  • 2 tsp cinnamon
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 stick butter
  • Pinch of salt
  • 2 tbsp vanilla extract
  • 4-5 tbsp orange juice

 

Instructions

    1    Prep the Potatoes

◦    Clean and peel the sweet potatoes.

◦    Slice them into ½-inch rounds and set aside.

    2    Make the Syrup Base

◦    In a large pot over medium heat, add the brown sugar, granulated sugar, butter, cinnamon, salt, vanilla extract, and orange juice.

◦    Stir until everything is melted and combined.

    3    Add the Potatoes

◦    Place the sliced sweet potatoes into the pot, gently stirring to make sure each piece is well coated in the syrup mixture.

    4    Simmer

◦    Bring the mixture to a boil.

◦    Once boiling, cover the pot and reduce the heat to let the potatoes simmer until fork-tender.

    5    Thicken the Syrup

◦    When the potatoes are tender, remove the lid and increase heat back to medium.

◦    Allow the syrup to cook down and thicken until it becomes a rich, glossy coating over the potatoes.
