This hearty, flavorful dish is a staple in Mexican cuisine, perfect as a side or a satisfying meal on its own. Smoky bacon, savory hot dogs, and a rich tomato-jalapeño broth give these beans an irresistible taste. Serve them with warm tortillas or alongside grilled meats for a true taste of tradition!

Ingredients:
– 2 lbs pinto beans
– ½ lb thick-cut bacon, diced
– 5 hot dogs, sliced
– 4 Roma tomatoes, diced
– 2 jalapeños, diced (adjust for heat preference)
– ½ white or yellow onion, diced
– 1 bunch fresh cilantro (½ left whole, ½ finely chopped)
– 3 tablespoons minced garlic

– Salt as needed

– 1 Teaspoon of onion powder

– 1 Teaspoon of garlic powder

– 1/2 Tablespoon of Chicken bouillon

Instructions:

1. Prepare the Beans:
Sort through the beans, removing any broken pieces or debris. Rinse well under cold water. For a shorter cook time, soak the beans overnight in water.

2. Cook the Bacon & Hot Dogs:
In a large pan over medium heat, cook the diced bacon and sliced hot dogs until browned and slightly crispy. If you prefer a lighter dish, drain the excess fat—otherwise, leave it for extra flavor.

3. Sauté the Vegetables:
Add the diced onion, tomatoes, and jalapeños to the pan. Cook for about 3 minutes, stirring occasionally, until fragrant and softened. Add the minced garlic and cook for another minute.

4. Combine Everything in a Pot:
Transfer the rinsed beans and sautéed mixture into a large pot. Add enough water to cover the beans by about two finger-lengths. Stir in half of the cilantro bunch whole, and finely chop the other half to add later for extra freshness. Add in spices. (adjust spices to your taste)

5. Simmer to Perfection:
Bring the beans to a boil, then cover and reduce the heat to medium-high. Let them cook for 1.5 to 2.5 hours, depending on whether they were pre-soaked. Stir occasionally and ensure the beans remain covered with water, adding more if necessary.

6. Check for Doneness & Serve:
Once the beans are tender and infused with flavor, remove the whole cilantro bunch and discard it. Stir in the finely chopped cilantro for a fresh finish.

Serving Suggestions:
