Ingredients:
- 1 to 1.5 lbs shrimp, cleaned and deveined
- 2 cucumbers, diced
- 5 to 10 limes, juiced (adjust to your taste)
- 3 Roma tomatoes, diced
- 2 jalapeños, finely chopped (adjust based on your heat preference)
- Alternatively, use Serrano peppers for an extra kick
- 1/2 red onion, finely chopped
- Fresh cilantro, chopped
- Salt and pepper, to taste
Instructions:
- Prepare the Shrimp: Chop the shrimp into bite-sized pieces and arrange them in a shallow dish, ensuring they are spread out evenly.
- Marinate in Lime Juice: Squeeze the juice of 5 to 10 limes over the shrimp, you want to make sure the lime covers the shrimp . Let it marinate for 20-30 minutes, allowing the shrimp to “cook” in the citrus. You’ll know it’s ready when the shrimp turns pink and opaque.
- Prepare the Vegetables: While the shrimp is marinating, finely chop the cucumbers, tomatoes, jalapeños, red onion, and cilantro. Make sure all the vegetables are cut into bite-sized pieces.
- Combine: Once the shrimp has finished marinating, add the diced vegetables to the dish and stir gently to combine. Season with salt and pepper to taste.
- Serve: For the perfect finish, serve the ceviche on crispy corn tostadas and fresh avocado slices on top.
