
Ingredients
- 2 lbs chicken breast, diced into cubes
- 1 cup plain Greek yogurt
- 1 lemon (juice)
- 3–4 cloves minced garlic
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper (to taste)
- 1–2 tbsp chopped parsley
Instructions
1 Prep the chicken
Dice chicken breasts into bite-sized cubes.
2 Make the marinade
In a large bowl:
◦ Add Greek yogurt
◦ Mix in lemon juice
◦ Add minced garlic and all spices
◦ Season with salt and pepper
3 Coat the chicken
Add chicken to the bowl and mix well until fully coated.
4 Marinate
Cover and refrigerate for at least 1 hour (best if 8–24 hours).
5 Cook
◦ Heat a pan over medium-high heat
◦ Add a little oil
◦ Cook chicken in a single layer
◦ Let it sear before stirring to get a nice brown crust
◦ Cook until fully done (about 6–8 minutes)
6 Finish
Sprinkle with fresh parsley before serving.
